BASIC FUNCTION:

Under the direction of the appropriate administrator, provide menu planning for dietary restrictions and diet modifications for students from 0-22 years of age.  Provide assistance in producing production record forms, nutritionals and copy for daily use.   Provide Safety and Sanitation Training to Food Service personnel.  Provide assistance to the Director or Assistant Director of Child Nutrition Food Service.

REPRESENTATIVE DUTIES:

Use nutrient analysis software to create district monthly production records and nutrient analysis to ensure proper nutritional meals for all students. (E)

 

Coordinate and communicate with physicians, school nurses, parents and the Food Service staff concerning food substitutions required for students with disabilities or special needs. (E)

 

Keep specifications sheets, fact sheets and Nutritional sheets on all products that are used for menu planning.  (E)

 

Knowledgeable of new trends and innovations and new federal and state regulations in food service attending meetings and conferences as appropriate. (E)

 

Participate/Assist/Coordinate in staff training, assist in planning in service training programs and conduct workshops. (E)

 

Assist with on-site visitation to observe methods, practices and procedures are followed according to regulations. (E)

 

Place food orders to the district warehouse. (E)

 

Compliant with safety and sanitation procedures. (E)

 

Maintains regular and prompt attendance in the workplace. (E)

 

Perform related duties as assigned.

 

 

 

QUALIFICATIONS

 

Knowledge of:

Nutritional requirement of school-aged children

Create menu analysis and Production records for daily use.

Combinations, to allergies and substitutions

Principles of quantity food preparation and nutrition

Food terminology, markets and commodities

Special need diets for students

 

Applicable laws, rules and regulation related to assigned activities

Health, safety and sanitation principles and procedures and applicable state regulations

Spreadsheet computer software programs and work processing

Principles and practices of supervision and training

 

Ability To:

Plan special diets for students with allergies or special needs

Use a computer and software to create production records and nutrient analyses

Interpret and apply federal, state and local policies, procedures, laws and regulations

Provide training to district personnel in Safety and Sanitation and maintaining records of completion

Communicate effectively

Sit or stand for extended periods of time. 

 

EDUCATION AND EXPERIENCE:

Any combination equivalent to:  Actively working as a Nutrition Specialist or Registered Dietician for at least 2 years and as a Supervisor in a Food Service institution for at least 5 years, and have been involved in food preparation in large quantities.   

 

LICENSE AND OTHER REQUIREMENTS:

Valid California Driver’s License

Valid Train the Trainer with Serve Safe and or National Registry of Food Safety Professionals

Nutrition Specialist Certification Certificate

Registered Dietician, preferable but not mandatory

 

WORKING CONDITIONS:

Requirements / Qualifications

EDUCATION AND EXPERIENCE: Any combination equivalent to: Actively working as a Nutrition Specialist or Registered Dietician for at least 2 years and as a Supervisor in a Food Service institution for at least 5 years, and have been involved in food preparation in large quantities. LICENSE AND OTHER REQUIREMENTS: Valid California Driver’s License Registered Dietician, preferable but not mandatory
