BASIC FUNCTION: Under the direction of the Food Service Supervisor, assist in cooking and baking activities; participate in the assembly and serving of lunches and snacks at a high school central kitchen; inspect food packs to assure quality and quantity of food items; maintain work area and equipment in a safe, clean and sanitary condition. DISTINGUISHING CHARACTERISTICS: The Food Service Assistant II class is a single position class. The incumbent assists in the basic preparation, cooking and heating of food items. Food Service Assistant I incumbents work in a central kitchen assembling and packaging food for transport to District satellite serving facilities and assist in serving lunches and snacks to students and faculty. REPRESENTATIVE DUTIES: Assist in preparing and cooking entrees, soups, vegetables, gravies, meat dishes or other main dishes as specified by school menu; bake cookies from frozen dough; check recipes and estimate quantities of supplies needed or when program requires. E Operate a meat slicer, grinder, vertical cutting machine and other equipment to prepare ingredients for assembly. E Perform duties of the Food Service Supervisor in absence. E Participate in the assembling and wrapping of hot and cold food packs to be transported to satellite serving facilities; supply items to assembly line with ingredients as assigned. E Assemble food packs in compliance with portion and quality control standards; assist in recording counts of portions and food items assembled; assure correct quantity of food packs, beverages and supplies are sent to satellite serving facilities. E Sell breakfasts, lunches and snacks and collect money and tickets from students and faculty; operate a cash register and receive and return proper amounts; count money and assist with meal counts and money reconciliation. E Portion, box and serve breakfasts, Type A lunches and entrees to students and staff according to established procedures. E Prepare items and stock snack bar; sell snacks at a snack bar and restock as needed. E Prepare assembly line and eating and serving areas; set up steam tables; set out trays, utensils, food and beverages when program requires. E Operate a dish washing machine and wash and clean a variety of kitchen accessories such as trays, pots and pans, utensils, counters, tables; wipe tables, steam tables and serving areas; clean and store plates and accessories in proper, safe and sanitary location as needed. E Maintain records related to quantity of food used and items prepared; maintain records of free and reduced meals served when needed. E Assist in storing food and supplies according established procedures; dispose of leftovers and garbage. E Perform related duties as assigned. KNOWLEDGE AND ABILITIES: KNOWLEDGE OF: Proper cooking methods. Basic quantity food preparation including washing, cutting and assembling food items and ingredients. Proper methods of storing equipment, materials and supplies. Sanitation and safety practices related to preparing and serving food. Standard kitchen equipment, utensils and measurements. Basic math. Basic principles of cleanliness. ABILITY TO: Assist in cooking and baking activities. Prepare and set-up food for service to students and faculty. Serve food to students and faculty according to established procedures. Learn the proper methods of using mechanical conveying equipment. Operate kitchen equipment used in quantity food preparation. Prepare food for transportation. Make change quickly and accurately. Understand and follow oral and written directions. Meet schedules and time lines. Work cooperatively with others. Add, subtract, multiply and divide quickly and accurately. Communicate effectively both orally and in writing. EDUCATION AND EXPERIENCE: Any combination equivalent to: sufficient training and experience to demonstrate the knowledge and abilities listed above including two years experience in preparing, cooking and baking food in large quantities. WORKING CONDITIONS: ENVIRONMENT: Central Kitchen environment. PHYSICAL ABILITIES: Dexterity of hands and fingers to operate a variety of standard kitchen equipment, standing for extended periods of time, lifting objects weighing up to 40 pounds, reaching overhead, above the shoulders and horizontally, bending at the waist to prepare and box food, and seeing to collect money and assure correct quantity of food packs. HAZARDS: Fumes from cleaning chemicals.
